Modern wheat may be making people sick.
Humans have been eating wheat for about 10,000 years, but modern research has shown most -- perhaps all -- people develop problems with their intestines because of certain kinds of proteins found in wheat.
The situation got worse in the 1980s when new high-yield strains created by genetic scientists were introduced into the food supply with proteins that are even less healthy for humans. Most Americans consume wheat as the source for 50, 60, or even 70 percent of their calories.
One researcher calls that an "extremely unnatural and perverse situation."
